Young, driven and talented, 27-year-old Chef Hoi Kuok I is making a mark for himself in the culinary circles. Always game for challenges, he joined RWS in August 2009 as part of the key pre-opening team and contributed to the success of the seamless culinary operations in the resort today. Working hand-in-hand with RWS’s Executive Pastry Chef Kenny Kong, Chef Hoi takes charge of the confectionary in Festive Hotel’s Boulangerie and the exquisite desserts at many high-profile events in the resort. A master in chocolate showpieces, he was selected as team captain of the Singapore National Pastry Team in 2008. Since then, he has led his team mates to clinch top honours in international pastry competitions like the Asian Pastry Cup and the World Pastry Cup in Lyon France in 2011 and 2009.
